Sticky Honey-Mustard Chicken Thighs
Salted, smoky thighs finished with a honey, Dijon and soy glaze that goes sticky in the last few minutes.
Why it works: Salt early, glaze late: the thighs brown first, then a honey-soy-mustard glaze turns sticky in the final minutes without burning.

Ingredients
- 2 lb boneless skinless chicken thighs
- 1½ tsp kosher salt (half if table salt)
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp black pepper
- 1 tbsp olive oil
- 3 tbsp honey
- 2 tbsp Dijon mustard
- 1 tbsp whole-grain mustard
- 1 tbsp soy sauce
- 1 tsp cider vinegar
Steps
- Pat the thighs dry and season all over with salt, paprika, garlic powder and pepper. Rest 15 minutes (or refrigerate uncovered up to a day).
- Stir honey, both mustards, soy sauce and vinegar together; microwave 30–60 seconds until slightly thickened. Set half aside for serving.
- Rub the thighs with oil and lay them flat in a single layer. Cook as shown in your settings, flipping halfway.
- Brush with glaze for the last 3 minutes so the sugar caramelizes but doesn't scorch.
- Check 165°F (thighs stay juicy up to 175°F), then toss with the reserved glaze.
Safe temperature
165°F. Thighs stay juicy even at 175°F.
