Maple-Dijon Glazed Salmon
Salmon fillets brushed with a maple, two-mustard and lemon glaze that caramelizes while the fish cooks.
Why it works: Tangy mustard balances the maple, and a thin glaze caramelizes in the 10 minutes salmon needs, so it never turns candy-sweet.

- 1 clove garlic, grated
Steps
- Pat the fillets dry and season with salt and pepper.
- Stir maple syrup, both mustards, lemon juice and garlic together.
- Brush the glaze over the tops and sides. Place skin-side down in a single layer (a strip of foil under them makes lifting easy).

- Done at 145°F or when it flakes easily. Spoon any leftover glaze over the top.
Safe temperature
145°F. Or until it flakes easily and is no longer translucent.
