Crispy Parmesan-Lemon Broccoli
Charred-edge broccoli finished with Parmesan, lemon and a pinch of chili. The veg side that disappears.
Why it works: A spoonful of water steams the stems while the oil crisps the tips; Parmesan and lemon at the end add salt and brightness.
